Meat carpaccio with black truffles flake
Ingredients for four persons:
- 12 wafer thin slices of fillet of beef
- juice of ½ lemon
- 30 gr or 1oz. flakes of Reggiano Parmesan cheese
- Black truffles flake
- 10 gr. (1 teaspoon) extra virgin olive oil
- a bunch of rocket,
- salt and pepper to taste
Preparation:
Place the beef slices on a serving dish, season with salt, pepper, olive oil and lemon juice. Cover with the flaked Parmisan cheese and black truffle. Garnish with sprigs of fresh rocket. Leave at least 20 minutes before serving.
